The recipe below is my Southern Living cookbook, published in 1987. I have no idea if this is the latest version or not. What I like about this dish is how the "cake". It cooks naturally in the form of bread, a "vessel" for the edible apple mixture.

German Apple "Pancake"

2 eggs

1/2 cup all-purpose flour

1/4 teaspoon salt

1/2 cup milk

1 tablespoon butter

3/4 cup brown sugar [I use much less than]

1 1/2 tablespoons cornstarch

1/2 cup milk

1/4 cup melted butter

4 cups peeled and sliced ​​apples




Mix eggs, flour, salt and 1/2 cup of milk and whisk until smooth. Heat a ovenproof nonstick 10-inch skillet [I use cast iron] 450 for 5 minutes or until hot.
